Fast and Healthy Day 19: Thai Turkey Soup

This soup has very deep and fresh flavors and is excellent if you are fighting a cold. I used left over turkey from a bird I cooked earlier this week and used some left over gravy as the bullion base. You can use broth instead.



Thai Turkey Soup

1 onion diced
2 garlic cloves minced
1 rib celery diced
1 red pepper diced
1/4 head Savoy cabbage shredded
8 cups broth
4 cups shredded cooked turkey
1 inch fresh ginger diced
4 tablespoons soy sauce
1 tsp fish sauce
1 tsp siracha chili sauce
4 oz. soba noodles
1/2 cup fresh cilantro chopped
1/2 cup fresh basil chopped
2 scallions thinly sliced
lime wedges for serving

In a large stock pot heat 1 tbsp vegetable oil. Saute the onion until translucent then add garlic, celery, ginger, red pepper and cook about 5 min. Add cabbage and stir until slightly wilted, about 2 min. add broth, turkey, soy sauce, siracha, and fish sauce. Bring to a boil and cook for 15 min. Add Soba noodles and cook for about 5 min or until noodles are soft. Season with black pepper as needed then stir in cilantro, basil and scallions just before you serve. Serve with lime wedges.
