Aunt Connie's Chocolate Sauce (kind of, it is now vegan)

My great aunt Connie has always been a central figure in my life. She has been an unending source of joy and laughter. She is a pillar of strength in adversity and heartache and man...she knows how to cook. She is one of the most beautiful old Greek ladies that I know and I am blessed to have been able to spend  many hours of my life around her table. This is an adaptation of her chocolate fudge sauce. It is vegan and gluten free, delicious on anything you can pour it on or dip into it.



It is best enjoyed with family and laughter!



Chocolate Fudge Sauce

1/2 cup granulated sugar
1 1/2 tbsp corn starch
3 tbsp cocoa powder
1/2 tsp salt
dash cinnamon
1/2 cup water
2 tbsp coconut oil
1 tsp vanilla

1. Combine sugar, corn starch, cocoa, salt, cinnamon and water in a medium saucepan. Heat over medium heat until mixture thickens.

2. Add the coconut oil and mix until it all melts. Lastly mix in vanilla and enjoy.
