Fast and Healthy Day 13: Baked "Fried" Green Tomatoes

This week I came into a bunch of green tomatoes. (thanks Nancy) Nancy suggested making fried green tomatoes and that got me thinking. I have modified my Almond Crusted Tilapia recipe so it is not fried so I decided to try the same technique with the tomatoes. The experiment was a huge success, thumbs up all around!! Here is the healthy and tasty version for your Green Tomatoes :)

Baked "Fried" Green Tomatoes

5 medium green tomatoes
1/2 cup flour
1 tsp dried parsley
1 tsp lemon pepper
2 egg
1/4 cup milk (or plain almond milk)
1/2 cup grated parmesan
1/2 cup bread crumbs or crushed almonds**

**(both came out nice and crunchy, it simply is a matter of taste and diet)

Preheat oven to 400 degrees. In three bowls prepare your coating. Bowl #1: mix together the flour, parsley and lemon pepper. Bowl #2: whisk together eggs and milk. Bowl #3: Combine the Parmesan and crumbs. Slice the rounded tops and bottoms off your tomatoes and remove the stems. Slice to 1/4 inch thickness. Dredge the tomato slices in the flour, then coat both sides in the egg mixture, then coat with the cheese and crumbs. (trick from Granny Riddle...use one hand for the wet coating and one hand for the dry. This keeps you from having sticky monster fingers) Place coated tomato slices on a parchment lined baking sheet. Bake for 25 minutes. Serve with ranch dipping sauce, or we liked ketchup mixed with siracha hot sauce.

  1. i just realized that I have never posted my Almond Crusted Tilapia recipe which is a travesty. How did that happen?? I will remedy that tomorrow :)
