Fast and Healthy Day 14: Almond Crusted Tilapia

This recipe is AMAZING!!!!! The fish is covered in crushed almonds and Parmesan then baked. It comes out crunchy on the outside and flaky and delicious on the inside, no oils or frying necessary.

Almond Crusted Tilapia

2 eggs
1/3 cup milk (or unflavored almond milk)
1 tsp lemon pepper
1 tsp powdered garlic
1 cup ground almonds
1 cup freshly grated Parmesan cheese
1/4 cup flour
5 Tilapia fillets
lemon wedges for serving

1. Preheat overn to 400 degrees. Prepare the bowls for battering the fish. Bowl #1: combine flour lemon pepper and garlic powder. Bowl #2: beat the eggs together with milk. Bowl #3: combine the finely ground almonds and the Parmesan cheese.
2. Pat the fillets dry with a paper towel. Dredge fillets in flour, then coat in the egg mixture, then cover with the almond crumb mix. Place fillets on a baking stone or parchment lined baking sheet. Bake at 400 for 25 min. Serve with lemon wedges.
