Samosa Pie

We love Indian food, and our favorite place to go get Indian food is Shanti Taste of India. We really love their veggie samosas.

I decided to try and replicate the samosas at home. I got the filling, but I had a REAL hard time getting the wrappers right. They looked a mess. Then I had an idea, why not make one big samosa pie for everyone to share?! It worked really well. I have used both frozen puff pastry and Philo dough. Both work well. I suggest you use whichever you are most comfortable. You can easily veganize this recipe too by using Olive oil in the pastry and substituting chick peas for the meat. We eat it both ways. There are never left overs of this one at my house. I hope you enjoy.

SAMOSA PIE

Ingredients:

1 tbsp butter
1 lb ground meat ( I have used pork, Turkey and venison. Anything works)
1/2 onion chopped
2 medium potatoes chopped
1 green bell pepper chopped
1 carrot chopped
1/2 cup frozen or fresh peas
2 tbsp curry powder
1/2 tsp ginger
Pinch of hot pepper flakes
1 14oz can coconut milk
Fresh celantro
4 tbsp butter melted
1/2 box (or 1 roll) Philo pastry

Preheat oven to 400 degrees

1. In a large skillet heat butter over medium heat, add onion and cook until almost opaque. Add the meat and cook about 3 minutes.

2. Add the rest of the veggies, curry powder, ginger and red pepper flakes. Stir swiftly so the veggie and meat mixture is evenly coated in curry, and cook 1 minute.

3. Add the coconut milk. Bring mix to a boil, reduce heat to low, cover and simmer about 12 minutes, or until the potatoes are fork tender.

4. Pour filling in a two quart baking dish and cover with one roll of Philo pastry, applying a brushing of butter between each layer.

5. Bake for 20 minutes or until the pastry is cooked and filling is bubbling at the edges.

6. Cool about 5 minutes and serve.
