This is not a fast recipe in it's cook time, but it is fast for nights when I have a lot to do and need dinner waiting for me when I get home. I am gaining confidence with raw beans. I was impressed at how well the dry beans cooked in this chili. We ate this over brown rice, but it could easily go well on a baked potato or with corn bread.
Slow Cooker White Bean Chili
1 cup small dry white beans (like navy beans)
1 lb ground turkey
1 24 oz can crushed tomatoes
1 cup water
1 green bell pepper diced
1 onion diced
3 cloves garlic diced
2 tbsp chili powder
1 tsp cumin
salt and pepper
Combine everything in a slow cooker and cook on high for 6 hours.
